You know I love a good slow cooker meal
That is why I loooove this Spicy Maple Barbecue Chicken Sandwich recipe! I do love to cook (obviously…I do have a healthy recipe blog), but I can barely find the time anymore. You would think that now that I’m spending most of my days back at home with Avery that I would have tons of time to spend in the kitchen, but we try to get out of the house quite a bit for fun time with friends and I spend a lot of time trying to make the house look like it wasn’t hit by a tornado. When I’m not on cleaning duty, I want to be playing with my kid, not spending all day in the kitchen. I use my slow cooker at least a couple times a week and this barbecue chicken sandwich is a welcome addition to the rotation. Luckily, I got my little helper to chip in with this one. 🙂
Low in sugar, high in flavor!
I had kinda sworn off barbecue when we cleaned up our diets because most barbecue sauces have a lot of sugar. I don’t think a little bit of sugar is killing any of us, but when it is in every freaking thing you eat, it starts to add up. When I realized I could make my own barbecue sauce (get the recipe in my eBook, Real Food with a Twist), I figured it was high time we brought barbecue back into our lives. I like to add a bit of spice to pretty much all of my recipes, too, so I couldn’t resist a little cayenne pepper kick here. If you are not a spice fan, you can leave the cayenne out. Go ahead, break out the slow cooker
I promise, this is the easiest barbecue you will ever make. We served it up on some good ol’ whole grain buns to make sandwiches, but you could also use this on a salad, on a corn tortilla, or even to make a barbecue chicken pizza. Enjoy!
