Peanut Butter Energy Balls

Peanut Butter Energy Balls-a great post-workout snack!

This Peanut Butter Energy Balls recipe is coming to you straight from my good friend and fellow nutrition and fitness guru, Erin Stimac. Go check out her site for awesome real food recipes and health articles.

She shared this recipe with me the night before my first CrossFit competition when we were discussing what I was planning on bringing with me. Luckily, I had all of the ingredients on hand except for the chocolate chips. They were sorely missed, but these energy balls were still super-tasty without them.

These are really easy to make and they have lots of fast-acting carbs and protein to give you energy and help you recover. They were great for my competition, but they would make a great post-workout snack any day of the week. Enjoy!

Peanut Butter Energy Balls

Total Time: 15 minutes

Yield: 16 balls

  • 1 3/4 cup old-fashioned oats
  • 1/2 cup dark chocolate chips (optional)
  • 1/2 tsp cinnamon
  • 1/4 cup honey
  • 1/2 tsp vanilla
  • 1/4 cup peanut butter (or other nut butter)
  • 2 tbsp unsweetened apple sauce

  1. Combine dry ingredients in a large bowl and stir to combine.
  2. Add remaining ingredients and stir with a whisk or fork (or knead by hand) until all ingredients are thoroughly mixed. Refrigerate for 10-15 minutes to let it firm up.
  3. Roll into 16 small balls and refrigerate for at least one hour, until firm.
  4. Store in the refrigerator until ready to serve.
