Whole Wheat Honey Waffles with Mixed Berry Chia Syrup

Weekends are for waffles, am I right?

Most mornings, we stick with savory breakfasts like potato and kale hash or bacon, egg and avocado breakfast sandwiches. Something about the weekend makes me just crave waffles, though. Please tell me I am not the only one. I know I’m not, but it’ll help my self-esteem if you tell me that you think about golden, buttery waffles as much as I do, okay? Okay.

I couldn’t just make regular ol’ waffles, though.

I (almost) always try to find a way to make healthy versions of my favorite foods…including waffles. What qualifies this a healthy waffle recipe? I used organic whole wheat flour instead of white flour and, instead of drowning them in syrup, I whipped up a quick, homemade mixed berry chia syrup. I know it sounds fancy, but it’s super-easy and it cuts waaaaaay back on the actual syrup by replacing most of it with fruit. The mixed berries with just a touch of maple syrup are a perfectly sweet sauce to top these yummy waffles.

Come to think of it, there are a lot of healthy waffle toppings.

You could add bananas and walnuts, peanut butter and dark chocolate chips, sautéed apples and pecans…uh oh, I sense another weekend waffle recipe brewing! 😉 What is your favorite waffle/topping combo? Maybe I’ll play around and try to recreate a new healthy waffle recipe!

Whole Wheat Honey Waffles with Mixed Berry Chia Syrup

Yield: Makes 4-6 waffles, depending on the size of your waffle iron.

Ingredients

    For the waffles:
  • 2 eggs
  • 1 ¾ cups milk (dairy or non-dairy)
  • 1/2 cup melted butter, slightly cooled (plus a little extra for greasing the waffle iron)
  • 2 tablespoon honey
  • 1 tsp vanilla extract
  • 2 cups whole-wheat flour (I used Bob's Red Mill)
  • 3 teaspoons baking powder
  • 1 tsp ground cinnamon
  • 1/8 teaspoon salt
  • For the syrup:
  • 1 cup of frozen mixed berries
  • 1/4 cup maple syrup
  • 1 tbsp lemon juice
  • 1 tbsp chia seeds
  • 1/4 tsp cinnamon
  • Dash of salt

Instructions

    For the waffles:
  1. Preheat waffle iron.
  2. In a large mixing bowl use an electric hand mixer (or wire whisk) to beat together eggs, milk, butter, honey and vanilla until smooth.
  3. Add in the flour, baking powder, cinnamon and salt and beat or whisk until smooth with no lumps.
  4. When the waffle iron is hot, brush it with a little bit of melted butter and then scoop about 1/3 cup of batter onto the center of the iron. Cook for 4-5 minutes until golden. Top with Mixed Berry Chia Syrup and serve.
  5. For the syrup:
  6. Combine all ingredients in a medium saucepan over medium heat. Cook, stirring occasionally, for 10-15 minutes until fruit is soft and begins to break down and thicken. Allow to cool while waffles cook. Any extra syrup can be stored in the refrigerator.

  1. These were delicious!!! Perfect for a Saturday morning. I haven’t had my waffle iron out in years, but it will definitely be making more regular appearances with this recipe!

    • That is wonderful! We got rid of our waffle iron in our Paleo days, but my mom gifted us one of her old ones.
