Look no further than this Healthy Slow Cooker Sweet Potato & Apple Casserole! Growing up, I loooooooved that sweet potato casserole with all the brown sugar mixed in and the tiny ooey-gooey marshmallows on top. I’m sure I’m not alone on that one. My mom actually found a healthier version that we started making once we cared about things like that. Instead of marshmallows, it was topped with banana slices. It might sound weird, but it was actually really good. It came out much better than the “healthy” apple crumble I tried to make one year when I read the ingredients incorrectly and used
just a tad WAY too many oats. It was, ummm, a bit dry. Oh well. Luckily, my skills in the kitchen have improved since then.
I gave sweet potato casserole a healthy makeover…and added apples!
I basically combined an apple crisp with a sweet potato casserole and made it super-easy to prepare in your slow cooker. I love using my slow cooker all year long because it keeps me out of the kitchen to do other things. Right now, those things mostly include snuggling with my baby and watching Star Wars or Harry Potter with my little man. 🙂 While the sweet potatoes and apples cook for a few hours, you can snuggle with your favorite people, and then add the crunchy topping and let it cook a bit longer.
This healthy casserole has just the right amount of sweetness
A little bit of maple syrup mixed in with the apples and sweet potatoes, and just a pinch of coconut sugar in the crunchy, nutty topping, gives this dish a touch of sweetness while still being light. It is the perfect side dish for a holiday party because it makes enough to feed at least six to eight people and you could easily double the recipe to feed more.
