Easiest Ever Lamb Roast

It was another crock pot night for dinner (recipe at the end of this post)! I am calling this Easiest Ever Lamb Roast because that is exactly what it is. Even for the crockpot, this recipe is easy. If you can wield a can opener, you can make this meal. I threw in green chiles, fire roasted tomatoes, diced bell peppers and a few spices. That was it. When I got home from work, I roasted some okra to eat as a side dish. It wasn’t my favorite way to eat okra, but it wasn’t bad.
Does anyone have any outstanding okra recipes then want to share? We have been getting some awesome okra from the farmers market, but other than the Okra Beef Stew I made, I don’t have much idea what to do with it.

 

Easiest Ever Lamb Roast
Serves: 6
Prep Time: 10 minutes
Cook Time: 7 hours
Total Time: 7 hours, 10 minutes

Ingredients
2 lb lamb roast
2, 8oz cans of diced green chiles
1, 14.5 oz can of fired roasted diced tomatoes
1 package of frozen diced bell peppers (mine were from Trader Joe’s)
1 tbsp cumin
1 tbsp paprika
1 tsp chili powder
1 tsp garlic powder
Salt and pepper to taste

Directions
-Place lamb roast in crock pot.
-Pour in green chiles, tomatoes and bell peppers.
-Add all spices to crock pot. Stir well to evenly incorporate spices and mix in vegetables.
-Turn crock pot to low and cook for 7 hours.
-Shred lamb with a fork prior to serving.

  1. Okra is great the way my Grandpa taught me to make it (yes, I am from the south…). In a cast-iron skillet, melt some fat (he used bacon drippings) and throw in your whole-pod okra (I trim off the very end of the cap/stem). Add salt, if you wish, and some pepper. Let it cook until the okra is very brown on bottom – not burned, just very brown. Stir/flip with spatula and repeat until the okra is browned all over. You can eat it as is – or stir in some chopped tomatoes, onions, garlic, whatever. I like it plain best.

  3. Hey Tarah, we make oven roasted okra all the time! Back when I originally posted this I didn't love okra, but I've acquired a taste for it since then and use it in lots of stews and even in scrambled eggs, but this is still my favorite: http://followingmynose.com/2010/09/roasted-okra-better-than-french-fries/

  6. Thanks, Meagan. That is what I love about crock pot meals, you can really put any combination of meat and veggies in there and it is going to be good 🙂

We either steam our sliced okra with broccoli, carrots, and cauliflower then top with mozzarella cheese or I put in with some creation that I make on the stove in a pan with meat, veggies, diced tomatoes, and salsa. Put them in at the end and place the lid on top. The okra will steam while the rest of it warms up together. I think it is yummy!
