A Trio of Date Ball Cookie Bites - Mint Chocolate Chip Cookie, Cocoa Coffee Bliss and Oatmeal Raisin Cookie

These were inspired by my love of cookies and the fact that my sweet tooth is quite demanding and I try to indulge it at least once a day. And, why shouldn't I? With tasty, simple treats like these it is totally fine to savor a few of these tasty bites every once in a while. These are made with only a few REAL food ingredients and they are naturally sweetened by the dates. No refined sugar here.

So, which is your favorite? Mint Chocolate Cookie Bites, Cocoa Coffee Bliss Bites, or Oatmeal Raising Cookie Bites? I think my answer is "All of the above"!

Paleo Pen Pals October 2013 - Cocoa Coffee Bliss Bites

My Paleo Pen Pal this month was Melissa of House of Skip and she sent me a jar of instant espresso. As soon as I received it, I knew what I was going to make. I sent Melissa some dried ancho chiles and you have to see this amazing chili she made with them!

I had already been working on some new flavors of my Paleo Brownie Bites and a coffee flavor sounded delicious!! Coffee and cocoa sounded even better so I created these Cocoa Coffee Bliss Bites. Less than ten ingredients, tons of chocolately flavor and a hint of coffee - these are a perfect treat. Thanks for the inspiration, Melissa!

Butternut Squash Fall Skillet

I am in full on fall recipe mode now and this one skillet meal is no exception! Warm, sweet apples and butternut squash mixed with ground beef and topped with a cinnamon-sprinkled fried egg. This would be great for breakfast or dinner...oh, or lunch.

I actually wrote up four recipes last week that I am just waiting to share with you! I feel like Baby A has finally emerged from newborn mode and he actually has fun watching me long as I stomp around, make funny noises and whatever else it takes to make him smile while I cook. He does seem to become mystified by steam rising from a pot of boiling water. It's pretty cute. The bonus for you is that it shouldn't take you nearly as long to make this as it did me, unless you are also trying to entertain an infant while you cook.

Healthy Fall Recipe Round Up

Fall is in the air! That means, cozy sweaters, scarves, bundling up my baby in super cute winter clothes and...everything pumpkin. Seriously people, there is more to fall than just pumpkins! I love a pumpkin chocolate chip muffin as much as the next person, but it has gotten a bit out of hand, don't you think? Even Xzibit has caught on to the crazy pumpkin action.


Hehe. :) All kidding aside, I love fall recipes. Warm, hearty and filling with deep flavors. Chilis, soups, and casseroles. And, okay, maybe even a pumpkin chocolate chip muffin. Paleo Turkey Stuffed Mushrooms with Herbed Mayonnaise

This was another instance of recipe magic! Everything came together perfectly and I knew I had to share the finished product with you. Here is how it went down...

Portabella mushrooms were on sale so I picked some up at the grocery store. I came home and pulled some other ingredients out of the fridge-ground turkey for protein, spinach, peppers, sun dried tomatoes and some mayonnaise I had made earlier in the week. This turned out to be a big combination for success.

I am not always a fan of ground turkey. I think it can be pretty flavorless even when you season the hell out of it. When you stir in this herbed mayo after sautéing the turkey with the vegetables, the flavor is definitely there and it is delicious. So if you have written off ground turkey, hopefully you'll give it another try with this recipe! You could make this with ground chicken, beef or lamb..whatever you have on hand!

I transitioned to a paleo(ish) diet over two years ago and one of the tips I saw over and over for people getting started was to change the way you think about snacks.
