This meal started out, as so many of my meals do, as a last minute, no food left in the house, what can I throw together kind of meal. Sometimes these meals are tasty, but not quite worth sharing, but this one sure was!
I had some leftover pulled pork, sweet potatoes, apples and some random vegetables to work with. I love stuffed sweet potatoes and have made many varieties, but I wanted to try something new. As the sweet potatoes were baking, I sauteed the onion, apples and pork in balsamic vinegar, mixed in a bit of chopped baby spinach leaves and then filled the baked sweet potatoes with all the pork-y, apple-y yumminess and baked them a bit longer.
I served this with a mixed veggie side salad. You can even make them "primal style" and top the sweet potatoes with a bit of shredded raw cheddar cheese, too!

Balsamic Pork and Apple Stuffed Sweet Potatoes
Time: 1 hour
4 sweet potatoes
2 tbsp olive oil
1 small red onion, diced
2 apples, diced
1 cup cooked, pulled pork
2 tbsp balsamic vinegar
Dash of salt and pepper
Handful of baby spinach leaves, chopped
Preheat oven to 425. Poke a few holes in sweet potatoes and place in oven on a baking sheet to bake for 45-50 minutes, until soft.
While sweet potatoes are baking, heat olive oil in a large pan over medium heat. Add diced onion to pan and cook about until soft and translucent, stirring often (about 3-4 minutes).
Add apples and cook for an additional 5 minutes, stirring often.
Add pork, balsamic vinegar and salt and pepper. Stir well to incorporate all ingredients and continue to cook until pork is heated through, about 5 minutes. Stir in chopped spinach leaves and remove pan from heat.
When sweet potatoes are baked through, remove from oven and set aside until they are cool enough to handle. Slice sweet potatoes in half and arrange on baking sheet.
Using a fork, smash down the insides of the sweet potatoes to make room for the filling. Spoon mixture evenly between sweet potato halves. Return to oven for about 5 minutes until sweet potatoes and filling are heated through.
