Whole30 Day 15

So remember that Kiss concert I attended last night? Yeah, about that. I was up way past my bedtime (I think I fell into bed around midnight, which is very late for this girl) and slept until the last possible minute, which meant 1) no workout and 2) no time to cook breakfast. I threw together a quick protein smoothie with egg white powder, banana, mango, blueberries, spinach and coconut milk. A smoothie alone is not usually enough to hold me over until lunch, but I knew I had an early lunch date with my friend Amy so it did the trick.

I met Amy for one last lunch together before I start my new job. I'll be on the other side of town so I won't be able to pop downtown for lunch dates anymore so we went to Qdoba. I pretty much order the same thing anytime I go to Qdoba - a naked taco salad with chicken, fajita veggies, pico de gallo and salsa verde. I don't go to Qdoba often, but I think it is one of the best choices on the menu.


I had a meeting at 2:00pm for work and I was pretty hungry afterwards so I made a snack of cucumber slices and deli meat topped with salsa and a bit of homemade applesauce on the side.


I had to go to the grocery store after work to stock up for a weekend trip to Illinois. Each year we have a girl's weekend with a friend of mine who moved from here to Decatur, Illinois so tomorrow three of my girlfriends and myself will load up the car and head to Decatur for the weekend. I really try to never let my diet needs be a burden on others so I am packing up a lot of food to take with me. After doing this for over a year, it is pretty easy to plan ahead. On the way home I snacked on a few of the pecans and apricots that I bought for my trip.


Since I was a little lazy this morning I had to get my run in after work. It is close to 100 degrees here right now and running in the heat is not my favorite so I chose to run on the treadmill. I get bored pretty quickly on the treadmill, but I got three miles in before I came home to make dinner.

Today was a "use up the leftovers in the fridge" stir fry that we made with shredded beef, carrots, broccoli, zucchini, sweet potato, mushrooms, cabbage, spices and a jar of salsa. This was one of the quickest and easiest dinners to put together, which was perfect since it was already nearing 8:00pm when we got home from the gym.


I tried not to eat too much of the stir fry because I plan to save some of it for breakfast in the morning so I had a little bowl with banana, coconut, cashews and coconut milk...while watching the Olympics...again. I'll get my life back in another week when the Olympics are over.
